Vinegar Green Chillies

When I am having noodles for lunch or dinner, I liked to add some vinegar green chillies to it. The vinegar green chillies taste great and it does makes me more hungry for food. Sometimes I find that some of the food outlets do not have vinegar green chillies even though they are selling noodles, soup or rice. But most of the Chinese restaurants in Jakarta will have it - and normally light soya sauce is added to it to enhance the flavor.

My friend told me that it is easy to make vinegar green chillies at home. His instruction was - get green chillies ( make sure that the chillies are firm, discard the bad ones) and sliced them. Remove all the seeds for better presentation and taste. Soak the green chillies in water with some salt for an hour.

Sterilised a glass bottle. Get a glass bottle with a non metalic cover and with a big mouth opening. Pour about a cup of white vinegar into a saucepan and add 2 tablespoon of sugar. Heat up and stir the vinegar till the sugar has melted and blend with the vinegar and then let it cool.

Rinse away the water from the green chillies and remove seeds or any impurities. Put the green chillies inside the glass bottle and pour the vinegar into the bottle. Seal the bottle and placed it in the fridge. Let it soak for 3 days and then it is ready to serve.

Try it at home. Vinegar green chillies taste great with noodles.
